Winter time must be soup time!

Here in the Southern Hemisphere, winter is upon us.
It a good time to start some delicious and super-healthy soups.
Here is one of my favourite recipes :

Vegetable and Lentil Soup

About 3 or 4 spoonfuls of red lentils
1 Onion
1 clove garlic
1 potato
1 carrot
1 parsnip
1 sweet potato
1 stick of celery, chopped very finely
About 1/4 cup of chopped pumpkin
2-3 tbsps vege stock
1/2 tsp marmite or vegemite (optional)
a few leaves of chopped spinach or silverbeet
1/2 tsp paprika
1/2 tsp curry powder
1/2 tsp sugar
2 tomatoes blended up in the blender/or 2 Tbsp tomato paste
A splash of red wine (optional)
A sprinkle of black pepper and salt

Add 2 litres of water and bring to the boil. Simmer for around 20 minutes or until the root vegetables and lentils are soft.

Now is a good time to pour the whole lot into the slowcooker to keep it nice and hot. This soup is lovely if made a few hours ahead and left to sit.

Yummy served with freshly baked bread, grated cheese sprinkled on top or croutons.
